Select settings > view all outlook settings > calendar. I find this difficult visually. There is always a 24 hour calendar. It also prevents you from scrolling through non working hours… And then change your working hours to only the hours you want to see rather then just your working hours. Choose work hours and location, and then define your work schedule by choosing days, times, and locations. To change your work hours, in the start time and end time lists, click the start time and end time of your work day. When the window is smaller or the time scale uses shorter periods (i.e., 15 min), you’ll see the start of the work. This will maximize the view of your hours of productivity. I'll set mine to 9am to 1am.

I have now spent almost an hour trying to figure out something that should be a very basic feature. I only want my calendar to display my set working hours. You can change your working hours here.
